Classic Fair-Style Corn Dogs
Ingredients
  • 1 quart oil for deep frying
  • 1 cup all-purpose flour
  • 2/3 cup yellow cornmeal
  • 1/4 cup white sugar
  • 1 1/2 teaspoons baking powder
  • 1 teaspoon salt
  • 2 tablespoons bacon drippings
  • 1 egg, beaten
  • 1 1/4 cups buttermilk
  • 1/2 teaspoon baking soda
  • 2 pounds hot dogs
  • wooden sticks

Preheat the deep fryer to a high temperature of 365 degrees F (185 degrees C).

Combine dry ingredients such as flour, cornmeal, sugar, baking powder and salt in a large mixing container. Add the melted bacon drippings to the dry ingredients and stir until well combined. Create a central depression in the mixture, then pour in the egg, buttermilk and baking soda. Mix all the ingredients together until they form a smooth and consistent batter.

Dip each hot dog into the batter, gently removing any excess mixture. Insert wooden skewers into the ends of each hot dog for easy handling. Fry a small batch at a time in the hot oil until they achieve your desired level of browning. Remove from the oil and place on paper towels or serve directly on paper plates.
