- 2 tablespoons Asian fish sauce
- 1 tablespoon soy sauce
- 2 teaspoons sriracha hot sauce, or to taste
- 1 teaspoon fine sea salt
- 1 teaspoon freshly ground black pepper
- 1 teaspoon Chinese five-spice powder
- 1 tablespoon vegetable oil for pan roasting

Position the roast on its side and divide it into two equal portions using a sharp knife. Create shallow, diagonal cuts on both sides of each piece to create a decorative pattern. Arrange the cut pieces in a flat dish.

Combine rice vinegar, garlic, fish sauce, soy sauce, sriracha, salt, pepper, and Chinese 5-spice powder in a bowl. Blend the ingredients together until well mixed, then pour the marinade over the meat pieces. Ensure each piece is fully coated by gently turning them over several times. Allow the meat to marinate at room temperature for approximately 30 minutes, or refrigerate it in a zip-top bag for 3-4 hours.

Heat a heavy cast iron skillet over medium-high heat and add one tablespoon of vegetable oil. Sear the meat on each side for 4-5 minutes per side, or until it reaches a minimum internal temperature of 145 degrees F (63 degrees C).
